White Tea

Oringating back to the Song Dynasty, white tea is one of the fundamental Chinese teas. It is non-fermented with its surface completely covered with young white fur, mainly produced in the province of Fujian.

Yin Zhen Bai Hao and Bai Mu Dan are the two most famous white teas. The freshness of the hand picked tea leaves are strictly required, where only tight buds are used. Its processing technique is unique and simple with only two steps, natural withering under sun heat and roasting over fire.

White tea is the least processed tea; therefore, most nutrients are still kept inside the leaves. With its high content in anti-oxidant and its small yearly production, its popularity passed most of the well-known green tea.

Health benefits:
Anxiety relief, anti-aging, strengthen immune system

Brewing method:
2 tea spoons (4g) of tea leaves in a traditional Gaiwan infused with 75°C hot water for 1 minute and add 15 seconds for each additional infusion.
